Vanilla Rice Pudding

Yield: 8 Servings

Prep Time: 10-15 Minutes

Cook Time: 32 Minutes

Total Time: About 45 Minutes

{ ingredients }

2 Cups Cooked Arborio Rice

3 1/2 Cups Skim Milk

2 Tablespoons Granulated Sugar

2 Teaspoons Granulated Splenda

1/4 Cup Nonfat Dry Milk

1/4 Teaspoon Salt

2 Large Eggs, Beaten

1/4 Cup Golden Raisins

1 Teaspoon Vanilla Extract

1 Teaspoon Ground Cinnamon

{ directions }

1) Combine the rice, milk, sugar, splenda, dry milk, and salt in a large saucepan over medium heat. Bring to simmer, then simmer 30 minutes. Stir occasionally.

2) Place your eggs in a medium bowl. Add half of the rice mixture to the eggs, stirring constantly with either a spoon or a whisk. Return the egg mixture to the pan over medium-low heat. Cook for two minutes, stirring constantly.

3) Remove from heat and stir in the vanilla and raisins. Spoon 1/2 cup pudding in each of eight bowls or 2 ounce ramekins. Sprinkle 1/8 teaspoon ground cinnamon over each serving.
