{Rustic} Berry Galettes with No-Chill Pie Crust

{rustic} berry galettes with no-chill pie crust

I can scarcely fathom that summer’s final days are presently upon us. The most serene, tranquil season… shall soon cease. As of this precise moment, radiant sunlight endures, countless throngs of visitors even now proceed to gather along the shore of our local beach, and I, myself, continue to partake in one serving of ice cream a day, at the very least {current preferences: chocolate fudge brownie, mud pie, & java chip frappuccino}. If only it could last forever – though I’d be pleased with merely another month, or so.

I adore Autumn. Ah-dore it, 100%. It is my absolute favorite time of year for a number of reasons, the majority of which involve some variety of piping hot tea, soft, snug, cozy fleece socks, and the ability to sport patterned tights {with ruffled socks + vintage shoes, of course}, once again – without the odd ‘tights during the summer?’ looks I tend to receive from perfect strangers throughout the duration of the warmer months. I love my tights. Seriously, love them. Ah, but I digress.

Why then, do I dread summer’s end? Allow me to explain – though I suppose it’s fairly obvious. High school.

No, not high school itself, per say. I thrive on routine; flourish under rules and order. Despite my incessant complaining {sorry, family!}, I actually enjoy studying. The rhythm of preparing flashcards, skimming through textbooks, finalizing a written report – It is so satisfying. Oh, and no – I do not have forebodings about the social aspect, in the least bit. Everyone is so nice. My issues then?Β Two little {not-quite-so-little} things.

One: Summer homework assignments.
Two: The lack of time to pursue activities IΒ enjoy over the course of the school year.

From a student’s perspective, summer homework is perhaps the most undesirable concept — ever. I am currently midway through the bulk of my tasks: Four novels, two sets of questions, half of one essay… complete! The numerous projects have interfered somewhat with my free time, however. Which leads me to my second point.

Photography. Food Styling. Creative Writing. Baking. Cooking. I delight in them all. Engaging in such hobbies throughout the year is remarkably difficult. Not impossible, not in the slightest. Simply… difficult. Regardless, I intend to post here as often as possible. Because I really, really like to. And therefore, I will find a way.

Wait…? You aren’t fascinated by my dull, tedious chattering? You… you’re here for a {rustic} berry galette with no-chill pie crust? What?

I don’t blame you. It is entirely extraordinary.

An utterly effortless, utterly delectable summer treat. Blueberries, blackberries, raspberries… all are currently plentiful. All are delicious. Paired with a buttery, ‘easy as pie’ crust —

Just wonderful.
