Gingerbread Pancakes

I can scarcely believe that December is upon us. This past year simply flew by… oh-so-quickly. So, so quickly. Despite of this rather disheartening thought, I am quite eager for the holiday season to officially commence. Perhaps it has already? Yes… I suppose it has begun, hasn’t it? My family has yet to acquire a Christmas tree… therefore, I am not wholly immersed in the holiday spirit, as of the moment. I shall be reasonably soon, however – and once the Christmas baking has begun, my excitement for and anticipation of the big day will surely be exceedingly high.

Now… let us discuss December. The final month of the year. December is striped, peppermint candy canes, December is caroling cheerful Christmas music, December is batch after batch of sweet sugar cookies. December is joy. Purely joy. I adore it.

Ah, and gingerbread… my absolute favorite holiday treat. In pancake form.

{I shared this photograph on Instagram shortly after preparing these pancakes, a month or so ago. Initially, I was not satisfied with the image and did not intend to share the recipe…but it is December, and they are gingerbread – so, regardless of the plain photo, I hope you enjoy!}

  4. I made this and they are absolutely delicious! It made it perfect for th Chritmas spirt mood I had:) I was wondering what would you recommend to dip it in? Regular pancake sirup just did’t seem to be the right thing.

    • Hi Carolyn, I’m so glad that you made and loved these pancakes! I actually used regular maple syrup myself, but if you would prefer something different here are a few suggestions…
      * Chocolate syrup
      * Buttermilk syrup
      * Icing (powdered sugar + a bit of milk and vanilla extract)
      You could find recipes on other blogs for alternatives, I am sure.
