Classic Ginger Cookies

December… December. We are nearly halfway through the magical month, a month of joyous holiday cheer, a month anticipation {for Christmas, of course!} , a month of baking, baking, baking. I adore December. The festive strings of multicolored lights, the red and white striped peppermint candy canes, the utterly gorgeous trees… all so amazing. It is a truly wonderful season, I delight in the beginnings of winter. Though snow does not fall in the state where I reside, a certain, frosty charm pervades the air. Cookies are the both necessary and undeniable antidote to such weather, particularly during the writing of a complex research paper — the project I have been immersed in, as of late.

Rather than dwelling on the negative (school!), however, let us discuss this sweet little treat. Ginger cookies! An absolutely delicious classic. This is the time for all things ginger, after all, and these do not disappoint. They are, in my personal opinion, the finest holiday cookie. You will love them, of that I am sure. After all… cinnamon? Cloves? Molasses and dark brown sugar? Ingredients for complete perfection, to say the least.ย 

Now… for the recipe. You will find that it is quite simple – and wholly extraordinary.

  6. Merry Christmas to you!!
    so I went ahead and made them this morning, and put in about 1 tsp of ground ginger, then a little over 1 tsp of fresh grated ginger { sorry I was eyeballing}, and they were fabulous!!!!!
