Coconut Oil Chocolate Chip Cookies
It is nearly… Christmas! Yay! Hurrah! Hooray!
I myself am so, so eager for the big day. Though I am expecting very few presents this year (I requested just a nice throw blanket from ‘Santa’, as my parents were kind enough to purchase me a lovely new camera lens this past October), I’m still totally excited for the countless festivities. Watching my younger brother’s eyes light up while they speedily unwrap each of their gifts is always such a treat. Their foolish, giddy grins never fail to make me smile.
Ooh, and speaking of smile-inducing things… cookie(s), anyone?
These coconut oil chocolate chips cookies are an absolute favorite recipe of mine. They bake up so perfectly, and the flavor is simply extraordinary. I prepared this particular batch in September, and have been anxiously waiting to share them with you since then. Hmmm, I suppose coconut oil cookies are just slightly untraditional, as far as Christmas baked-goods go, but oh, will they ever make a wonderful (not to mention palatable) addition to your holiday cookie tray!
Over a year ago I baked a sweet little batch of ginger cookies in preparation for the winter season. If you still happen to be in need of a delicious, classic Christmas cookie, I highly recommend them.
Christmas 2014 (in comparison to 2013) completely snuck up on me, I must admit. I had grand plans for the early weeks of December (a shih-tzu – in santa claus costumes – photoshoot! homemade peppermint bark! all the cookies for all the relatives!), but the days passed remarkably quickly. Autumn was a complete whirlwind; from New York to Europe to San Francisco! To… an utterly horrible winter cold. But, ah well. There’s always next year. Perhaps my planning skills will improve a tad by then, no?
